And just play it without the 5th string on there? Well for one, there's gonna be a ton of tension gone. That won't mess up the neck immediately, but over time it probably will. Two, in my experience, when you play with a string missing, there's a weird rattle-y sound that comes from the bass(almost like fret-buzz). I'm not sure if that's a tension issue or what, but it is there. And that's my two cents for now. I'm sure someone else will give you a better answer.

What Jacob said, it's the lack of tension that causes fret buzz.
I don't know for what purpose you would want to remove it, but don't. It will ruin the bass eventually.

The rattley sound comes from the post the string's usually wound around.

Why'd you want to remove it anyway?

I don't get how it can get in the way... Mine sometimes rings out when I'm playing stuff like My Sharona but that's it (and the problem's easily solved by a small technique adjustment anyway).

Speaking of the B string ringing out, there's one fret on my bass that when I play it, my B string will instantly vibrate with it. Now I know that when you play an octave that'll happen. But I remember that this particular fret was not a B and it was kinda annoying. I'll edit this later when I remember/find that fret again.
